Las fases de desescalada aprobadas por la administraci\u00f3n espa\u00f1ola han sido realmente conservadoras y <strong>restrictivas para la gastronom\u00eda espa\u00f1ola<\/strong>. <\/p>\n\n\n\n<p>Muchos restaurantes nos van a abrir hasta principios de Junio, y la presi\u00f3n por parte de las entidades y lobby hosteleros para ampliar las condiciones de aforo, sanitarias y terrazas siguen siendo fuertes. <strong>Con la rectificaci\u00f3n de pasar del 30% al 50% de uso de terraza en la fase 1<\/strong>, el sector ha ganado una primer tanto, <strong>pero sigue estando lejos de unas medidas acordes y sostenibles para la inmensa mayor\u00eda de negocios de restauraci\u00f3n.<\/strong><\/p>\n\n\n\n<p>Hoy d\u00eda 6 de mayo,  tendremos en un <strong>programa especial <\/strong>en directo a las 16h, en <strong>LIVE HORECA LAB<\/strong> con <strong>Sergi Arola Chef\u00a0<\/strong>de <strong>Lab * Michelin en Penha Longa Resor<\/strong>t. Con \u00e9l <strong>hablaremos de la vuelta a los fogones de la alta gastronom\u00eda<\/strong>. Qu\u00e9 valoraci\u00f3n tiene o le han trasladado los colegas de profesi\u00f3n, sobre como se va a ir haciendo esta desescalada.<\/p>\n\n\n\n<p>Todav\u00eda no hay <strong>normas o protocolos aprobados por la administraci\u00f3n<\/strong>, y hemos ido viendo sugerencias de medidas a realizar en los restaurantes. <strong>Con Sergi analizaremos aquellas que pueden ser viables, y otras que quiz\u00e1s pueden ser m\u00e1s efectivas<\/strong>.
