{"id":2366,"date":"2020-05-25T10:33:59","date_gmt":"2020-05-25T10:33:59","guid":{"rendered":"https:\/\/hosteleo.com\/blog\/?p=2366"},"modified":"2020-05-30T22:08:36","modified_gmt":"2020-05-30T22:08:36","slug":"como-atender-una-terraza-y-la-sala-post-covid-19","status":"publish","type":"post","link":"https:\/\/hosteleo.com\/blog\/como-atender-una-terraza-y-la-sala-post-covid-19\/","title":{"rendered":"C\u00f3mo atender una terraza y la sala post Covid-19"},"content":{"rendered":"\n<p><strong>C\u00f3mo atender una terraza y la sala post Covid-19<\/strong><\/p>\n\n\n\n<p>Desde hoy d\u00eda 25 de mayo <strong>en toda Espa\u00f1a se pueden abrir las terrazas de los establecimientos de hosteler\u00eda<\/strong>. <a href=\"http:\/\/www.linkers.es\"><strong>Linkers<\/strong><\/a>, consultora especializada en hosteler\u00eda y turismo, present\u00f3 la pasa semana <a href=\"https:\/\/hosteleo.com\/blog\/manual-internacional-covid-19-en-hosteleria-y-ocio-nocturno\/\">el primer manual internacional de hosteler\u00eda y ocio nocturno<\/a> contra la Covid-19, y<strong> hoy os dejamos la informaci\u00f3n relativa a la gesti\u00f3n de atenci\u00f3n de mesas y sala dentro de un restaurant<\/strong>e:<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Normas de seguridad sanitaria para atender una terraza post Covid-19<\/strong><\/h3>\n\n\n\n<p>Para dar un servicio el camarero se acercar\u00e1 al cliente<strong> utilizando una mascarilla, y ofrecer\u00e1 la propuesta gastron\u00f3mica a viva voz, con cartas digitalizadas, o con cartas desechables de un solo uso<\/strong>. <\/p>\n\n\n\n<p>Deber\u00e1n distribuir<strong> los espacios garantizando las distancia de seguridad de 2 m entre clientes<\/strong>. Podr\u00e1n utilizar <strong>elementos neutrales como mamparas o biombos, que ayuden a marcar distancias, quedando reducida la distancia a 1 m<\/strong>.<\/p>\n\n\n\n<p>\u25cf Se evitar\u00e1 el montaje de mesas como la colocaci\u00f3n de servilleteros, ceniceros evitando focos de contaminaci\u00f3n.<\/p>\n\n\n\n<p>\u25cf Los cubiertos deber\u00e1n estar protegidos, priorizando utilizar material de un solo uso, como las servilletas y manteles.<\/p>\n\n\n\n<p>\u25cf Se procurar\u00e1 explicar al cliente con amabilidad los tiempos establecidos por las medidas que estamos para poder gestionar el cierre y el cambio al siguiente turno previsto.<\/p>\n\n\n\n<p>\u25cf La entrega de la factura en la mesa no debe superar los 5 minutos, desde su solicitud.<\/p>\n\n\n\n<p>\u25cf A la hora del cobro o reserva, el intercambio de tarjetas o medios de pago se realizar\u00e1 mediante una bandeja para evitar el contacto f\u00edsico.<\/p>\n\n\n\n<p>\u25cf Se deber\u00e1 llevar el dat\u00e1fono para agilizar el cobro de las cuentas.<\/p>\n\n\n\n<p>\u25cf Habr\u00e1 que tener a mano, productos de limpieza para repasar aquellos elementos susceptibles de contacto (dat\u00e1fono, tablet, bol\u00edgrafos, etc).<\/p>\n\n\n\n<p>\u25cf Al salir el cliente, se desinfectar\u00e1 la mesa y silla y el camarero, renovar\u00e1 todo su material de protecci\u00f3n.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"734\" height=\"381\" src=\"https:\/\/hosteleo.com\/blog\/wp-content\/uploads\/2020\/05\/Captura-de-pantalla-2020-05-25-a-las-12.17.52.png\" alt=\"\" class=\"wp-image-2367\" srcset=\"https:\/\/hosteleo.com\/blog\/wp-content\/uploads\/2020\/05\/Captura-de-pantalla-2020-05-25-a-las-12.17.52.png 734w, https:\/\/hosteleo.com\/blog\/wp-content\/uploads\/2020\/05\/Captura-de-pantalla-2020-05-25-a-las-12.17.52-300x156.png 300w, https:\/\/hosteleo.com\/blog\/wp-content\/uploads\/2020\/05\/Captura-de-pantalla-2020-05-25-a-las-12.17.52-375x195.png 375w\" sizes=\"auto, (max-width: 734px) 100vw, 734px\" \/><figcaption>Normas de seguridad sanitaria para atender la terraza y la sala de un restaurante<\/figcaption><\/figure>\n\n\n\n<p><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>Normas de seguridad sanitaria para atender la Sala de un Restaurante<\/strong><\/h3>\n\n\n\n<p><strong>El personal de Sala del establecimiento utilizar\u00e1 su EPI adecuado<\/strong>, seg\u00fan sus tareas (mascarilla y guantes) durante su jornada de trabajo, cuando no se pueda garantizar la distancia interpersonal.<\/p>\n\n\n\n<p>Dispondr\u00e1 de los recambios necesarios que le permitan desechar tras cada sesi\u00f3n el material utilizado.<\/p>\n\n\n\n<p>En la operativa de Sala <strong>ser\u00e1 fundamental definir nuevos flujos de operaciones que ayuden a coordinar las tareas<\/strong>, y lograr que todo funcione con efectividad en tiempo y resultados. La disposici\u00f3n de las mesas <strong>deber\u00e1 respetar el 2 m de distanci<\/strong>a.<\/p>\n\n\n\n<p>Dirigirse a los comensales en un tono adecuado a la situaci\u00f3n, conocer bien la carta y sus al\u00e9rgenos para ofrecer y solventar todas las dudas y consultas que surjan durante el servicio.<\/p>\n\n\n\n<p>El establecimiento<strong> garantizar\u00e1 la distancia interpersonal, tanto en el interior como en el exterior, utilizando se\u00f1alizaciones que ayuden en la ubicaci\u00f3n del cliente<\/strong>.<\/p>\n\n\n\n<p>Se<strong> realizar\u00e1 un mantenimiento permanente de la desinfecci\u00f3n de todos aquellos espacios<\/strong>, mecanismos de apertura y cierre, y objetos de mayor contacto como: mesas, sillas, convoy de aceite, picaportes, secamanos, dispositivos digitales (dat\u00e1fono, tablets) ,etc.<\/p>\n\n\n\n<p>Se evitar\u00e1 el montaje de mesas ,as\u00ed como la disposici\u00f3n de servilleteros o ceniceros evitando focos de contaminaci\u00f3n.<\/p>\n\n\n\n<p><strong>Se ventilar\u00e1 el sal\u00f3n despu\u00e9s despu\u00e9s de cada servicio<\/strong>, para mantener las zonas comerciales con aire renovado.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1022\" height=\"662\" src=\"https:\/\/hosteleo.com\/blog\/wp-content\/uploads\/2020\/05\/Captura-de-pantalla-2020-05-25-a-las-12.30.47.png\" alt=\"\" class=\"wp-image-2369\" srcset=\"https:\/\/hosteleo.com\/blog\/wp-content\/uploads\/2020\/05\/Captura-de-pantalla-2020-05-25-a-las-12.30.47.png 1022w, https:\/\/hosteleo.com\/blog\/wp-content\/uploads\/2020\/05\/Captura-de-pantalla-2020-05-25-a-las-12.30.47-300x194.png 300w, https:\/\/hosteleo.com\/blog\/wp-content\/uploads\/2020\/05\/Captura-de-pantalla-2020-05-25-a-las-12.30.47-768x497.png 768w, https:\/\/hosteleo.com\/blog\/wp-content\/uploads\/2020\/05\/Captura-de-pantalla-2020-05-25-a-las-12.30.47-810x525.png 810w\" sizes=\"auto, (max-width: 1022px) 100vw, 1022px\" \/><figcaption>C\u00f3mo lavarse. las manos <\/figcaption><\/figure>\n\n\n\n<p>Se <strong>dispondr\u00e1n de geles de hidroalcohol en puntos de acceso<\/strong>, puntos de venta, mesas de pase de cocina a sala, aseos, recepci\u00f3n, mesas auxiliares etc. De acuerdo a las caracter\u00edsticas del establecimiento se dispondr\u00e1n con criterio, procurando garantizar su uso adecuado a tal efecto.<\/p>\n\n\n\n<p><strong>Los cubiertos deber\u00e1n estar protegidos, priorizando utilizar material de un solo uso, como las servilletas y manteles<\/strong>. En caso de manteler\u00eda de tela se deber\u00e1 procurar un lavado regular a una temperatura superior a 60\u00baC.<\/p>\n\n\n\n<p>Se <strong>evitar\u00e1 el montaje de mesas exponiendo el material sin proteger<\/strong>, y una vez llegue el cliente al establecimiento, se montar\u00e1 momentos antes de que tome su posici\u00f3n en la mesa. Se retirar\u00e1 de las mesas todo elemento decorativo.<\/p>\n\n\n\n<p>En establecimientos de ocio nocturno, desinfectar regularmente m\u00e1quinas recreativas, dispensadores, butacas y todo aquel dispositivo dirigido al uso del entretenimiento de los clientes.<\/p>\n\n\n\n<p>Para dar el servicio de Sala el camarero se acercar\u00e1 al cliente utilizando una mascarilla pudiendo ser acompa\u00f1ada de pantalla.
