Nuevos h\u00e1bitos que parecen haber llegado para quedarse. David Basilio, CEO de <a href=\"http:\/\/www.hosteleo.com\"><strong>Hosteleo<\/strong><\/a>, ha analizado la evoluci\u00f3n de esta forma de disfrutar de la hosteler\u00eda en el webinar \u201cReinventando el <em>delivery<\/em>\u201d, una forma de consumo que ver\u00e1 en el teletrabajo a un aliado inesperado.<\/p>\n\n\n\n<p>&nbsp;Este jueves, <strong>Hosteleo<\/strong> y <strong><a href=\"https:\/\/logytalent.com\/es\/\">Logytalent<\/a><\/strong> han organizado un webinar bajo el t\u00edtulo <strong>\u201cReinventando el <em>delivery<\/em>\u201d<\/strong>, en el que analizaron la evoluci\u00f3n de esta nueva forma de acercar la gastronom\u00eda a los hogares. De un tiempo a esta parte, hemos visto como empresas especializadas en el reparto de comida a domicilio han aterrizado en nuestro pa\u00eds, aprovechando las ventajas de las nuevas tecnolog\u00edas, permitiendo reinventarse a empresas que no realizaban este servicio. Adem\u00e1s, durante el confinamiento provocado por la pandemia mundial del COVID-19, establecimientos que no se dedicaban a esta tarea han adoptado esta forma de negocio. En el webinar han participado <strong>Jaume Boada<\/strong>, CEO de <a href=\"https:\/\/grupomox.com\/es\/\"><strong>Mox<\/strong><\/a> en Espa\u00f1a, <strong>Pedro Sanchez Ja\u00e9n<\/strong>, propietario de<strong><a href=\"https:\/\/bagagastronomico.com\"> Bag\u00e1 Espacio<\/a><\/strong> * Michelin, y <strong>David Basilio<\/strong>, CEO de Hosteleo y Director Ejecutivo de<strong> <a href=\"http:\/\/www.linkers.es\">Linkers<\/a><\/strong>, todo ello moderado por <strong>Gabino Diego<\/strong>, CEO <a href=\"https:\/\/www.forodelogistica.com\"><strong>Foro de Log\u00edstica<\/strong><\/a>.&nbsp;<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>El sector de la restauraci\u00f3n y de la hosteler\u00eda ha sido de los m\u00e1s castigados de la crisis, con p\u00e9rdidas de hasta 16.000 euros.<\/p><cite>Gabino Diego, CEO en Foro de Log\u00edstica<\/cite><\/blockquote>\n\n\n\n<p>Se\u00f1al\u00f3 Gabino Diego, aunque destac\u00f3 que las cadenas log\u00edsticas se han beneficiado, especialmente las de e-comerce, pero en hosteler\u00eda tambi\u00e9n se ha debilitado. \u201cGracias al <em>delivery<\/em> muchos comercios han podido tener algo de ingresos\u201d, se\u00f1al\u00f3, destacando que se ha vivido <strong>\u201cm\u00e1s de un 30% de incremento en el reparto de comida a domicilio\u201d<\/strong>.&nbsp;<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>El delivery, clave para la hosteler\u00eda post coronavirus<\/strong><\/h3>\n\n\n\n<p>Para<strong> Pedro S\u00e1nchez, \u201cel <em>delivery<\/em> es una oportunidad\u201d <\/strong>que ha surgido en el mundo de la alta gastronom\u00eda, algo impensable hace unos meses. <\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>\u201cHemos visto casos, como el de Daviz Mu\u00f1oz con \u2018Goxo\u2019. Es <strong>una oportunidad de negocio de futuro<\/strong>, con incluso locales en exclusiva para dar <em>delivery<\/em>\u201d.<\/p><cite>Pedro S\u00e1nchez, Bag\u00e1 * Michelin<\/cite><\/blockquote>\n\n\n\n<p>Pero no es tan sencillo como aparenta,<strong> <a href=\"https:\/\/hosteleo.com\/blog\/como-afronta-la-alta-gastronomia-la-vuelta-a-los-restaurantes\/\">ya que trasladar la experiencia de la alta gastronom\u00eda al servicio a domicilio es todo un reto<\/a><\/strong>.&nbsp; \u201cTiene muchas posibilidades, pero no puede sustituir al restaurante. Se disfrutar\u00e1 de forma diferente, pero no tiene nada que ver. Son conceptos distintos pero se viven complementariamente\u201d, destac\u00f3 el cocinero, con una estrella Michel\u00edn.<\/p>\n\n\n\n<hr class=\"wp-block-separator is-style-wide\"\/>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><strong>\u201cHay locales que han pasado de tener 20 pedidos a la semana a preparar 150<\/strong>.<\/p><\/blockquote>\n\n\n\n<hr class=\"wp-block-separator is-style-wide\"\/>\n\n\n\n<p><strong>Jaume Boada asegura que en Mox vivieron un escenario cambiante a medida que evolucion\u00f3 el confinamiento en nuestro pa\u00eds<\/strong>. Primero aumentaron los pedidos a supermercados, y a medida que disminuyeron, aument\u00f3 el de la comida a domicilio.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Estamos en una situaci\u00f3n mejor que antes del COVID-19, con un volumen de pedidos mayor a junio del a\u00f1o pasado proporcionalmente<\/p><cite>Jaume Boada, Grupo Mox<\/cite><\/blockquote>\n\n\n\n<p>Puede ser una tendencia que ha venido para quedarse\u201d, apunt\u00f3. Pero, para ello, muchos negocios todav\u00eda tienen que superar el reto de la digitalizaci\u00f3n. \u201cPara diferenciarse hay que hacer una inversi\u00f3n, promoviendo la digitalizaci\u00f3n centrando la inversi\u00f3n en personal, instalaci\u00f3n, producto y tecnolog\u00eda\u201d, afirm\u00f3.<\/p>\n\n\n\n<p><strong>Un ejemplo de \u00e9xito en la creaci\u00f3n de nueva estructura de personal<\/strong> en el \u00e1mbito del delivery y take away, es <strong>el Grupo Arzabal,<\/strong> que est\u00e1 creando un <a href=\"https:\/\/hosteleo.com\/es\/atencion-cliente\/madrid\/176377\/preparacion-de-pedidos-de-servicio-a-domicilio\"><strong>nuevo \u00e1rea de trabajo y est\u00e1 en b\u00fasqueda de talento<\/strong>.<\/a><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><strong>\u00bfQu\u00e9 significa digitalizar un negocio de restauraci\u00f3n?<\/strong><\/h3>\n\n\n\n<p>Dicha digitalizaci\u00f3n no solo supone el invertir en tecnolog\u00eda, sino sobre todo, pasar de tener un sistema de valoraciones del negocio subjetivas a objetivar todas las decisiones, maximizando as\u00ed las ganancias, tal y como mantuvo David Basilio. Y, aun as\u00ed, hay que tener en cuenta que el <em>delivery<\/em> y el restaurante con servicio en sala <strong>\u201cson negocios distintos. No solo por la producci\u00f3n, sino tambi\u00e9n por la gesti\u00f3n de recursos humanos.<\/strong> <\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>No deber\u00eda ser una forma de venta del restaurante, sino negocios aparte en los que se invierte en recursos como si fuera una f\u00e1brica y se deja fuera la parte del servicio de sala y <strong>apostando por los <em>riders<\/em>\u201d.<\/strong><\/p><cite>David Basilio, CEO de Hosteleo<\/cite><\/blockquote>\n\n\n\n<p>Una de las claves es entender c\u00f3mo gestionar este servicio a domicilio, mediante la creaci\u00f3n de un sistema propio o utilizando las empresas que ya operan en nuestro mercado. De hecho, apunta que <strong>\u201clos grandes operadores han sido incapaces de gestionar ellos mismos el reparto, teniendo que recurrir a operadores externos\u201d<\/strong>, algo que muestra la magnitud de la problem\u00e1tica que puede suponer la gesti\u00f3n de este servicio.
