Que nos ofrece algunos consejos para montar un restaurante post Covid-19<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cinco consejos para montar un restaurante post Covid-19<\/h2>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>1\u00ba La localizaci\u00f3n cambia de perspectiva<\/strong><\/h4>\n\n\n\n<p><strong>La localizaci\u00f3n siempre ha sido una de las primeras caracter\u00edsticas a la hora de emprender en restauraci\u00f3n<\/strong>. Si antes hab\u00eda que valorar la cantidad de personas que pasaban delante del establecimiento, o si estaba en zona de gran afluencia de turistas. En estos momentos deberemos de<strong> buscar la localizaci\u00f3n analizando la capacidad log\u00edstica que va a poder tener este negocio<\/strong>.<\/p>\n\n\n\n<p><strong>Es decir, <a href=\"https:\/\/hosteleo.com\/blog\/el-delivery-clave-para-la-hosteleria-post-coronavirus\/\">el delivery y el take away<\/a>, son y van a ser una manera de tener ingresos recurrentes en nuestro restaurante<\/strong>. En una nueva realidad donde las inc\u00f3gnitas de <a href=\"https:\/\/hosteleo.com\/blog\/los-rebrotes-del-coronavirus-en-espana\/\"><strong>posibles rebrotes del virus<\/strong><\/a> estar\u00e1n ah\u00ed, el establecer el negocio en un \u00e1rea de viviendas y con facilidades de reparto y recogida, ser\u00e1 un punto a favor para que sea un \u00e9xito. <\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Aquellos establecimientos situados en centros comerciales, tendr\u00e1n m\u00e1s dificultad en esta nueva realidad post virus.<\/p><\/blockquote>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>2\u00ba Modelos de negocio basados en la rentabilidad, que no en la venta<\/strong>.<\/h4>\n\n\n\n<p>En tiempos de bonanza y de buenas perspectivas econ\u00f3micas, los modelos de negocio basados en grandes n\u00fameros de venta, son los usuales, Pero ahora que tenemos una situaci\u00f3n de inestabilidad, <strong>deberemos de analizar nuestro negocio desde procesos basados en la rentabilidad.<\/strong> <\/p>\n\n\n\n<p><strong>A la hora de crear el business plan<\/strong> tendremos que realizar con mucho detalle <strong><a href=\"https:\/\/hosteleo.com\/blog\/escandallos-e-inventarios-poniendo-orden-en-nuestro-restaurante\/\">los escandallos y fichas t\u00e9cnicas<\/a>,<\/strong> para que cada unidad de producto vendido lleve consigo el porcentaje de ganancia establecido. Un storytelling que aune nuestra visi\u00f3n del negocio para traslad\u00e1rsela al cliente, de una manera cercana, entendible y atractiva.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>La historia de nuestra negocio es el mejor marketing posible para atraer y fidelizar a los clientes<\/p><\/blockquote>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>4\u00ba Ofertas gastron\u00f3micas cortas con productos de temporada<\/strong>.<\/h4>\n\n\n\n<p>Los men\u00fas largos, los men\u00fas degustaci\u00f3n han sido el modelo a seguir en los \u00faltimos a\u00f1os. Ahora <strong>deberemos adaptarnos a un cliente <\/strong>que pasar\u00e1<strong> menos tiempo en el restaurante, <\/strong>que pedir\u00e1<strong> la oferta gastron\u00f3mica a domicilio o para llevar<\/strong>.<\/p>\n\n\n\n<p>Por eso cuando vayamos a pensar nuestra oferta gastron\u00f3mica, habr\u00e1 que sopesar que tiene que ser una propuesta m\u00e1s bien corta y concisa. Donde los productos de temporada vendr\u00e1n a reforzar la historia de nuestro negocio, y nos ayudar\u00e1 a tener los costes de los productos en los m\u00e1rgenes adecuados.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p>Los productos de temporada ayudan a contar nuestras historia y a controlar nuestros costes <\/p><\/blockquote>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>5\u00ba La transformaci\u00f3n de la barra de los restaurantes<\/strong>.<\/h4>\n\n\n\n<p>Con la nueva normalidad, y qui\u00e9n sabe hasta cuando, la barra tiene que transformarse. Los modelos de negocio donde la barra es el coraz\u00f3n del restaurante, van estar en dificultades. Por eso es el momento de transformar la barra, tanto en su funci\u00f3n, y en su deslocalizaci\u00f3n.<\/p>\n\n\n\n<p><strong>La barra c\u00f3mo lugar central de venta, se transforma en lugar de abastecimiento, desde donde sale el servicio de bebidas, y sigue siendo una zona de guarda y custodia de productos, y lugar de caja central.<\/strong><\/p>\n\n\n\n<p>La funci\u00f3n de venta de la barra se podr\u00e1 realizar mediante gueridones o mesas de apoyo, cerca de las mesas.
