A la vez que el negocio del delivery se antoja c\u00f3mo una via de ingresos para las empresas, hoy os vamos a contar<strong> c\u00f3mo montar una dark kitchen en mi restaurante<\/strong>. <\/p>\n\n\n\n<p>No olvidemos que hay establecimientos muy bien situados que <strong>adaptando su infraestructura podr\u00edan pivotar y obtener un nuevo modelo de negocio adicional <\/strong>al que ahora tienen, que por los cambios de consumo producidos por el Covid-19 no les est\u00e1 funcionando como antes.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfQu\u00e9 es una dark kitchen?. \u00bfQu\u00e9 ventajas tiene?<\/h2>\n\n\n\n<p>Una <strong>dark kitchen<\/strong> o cocina fantasma, es una cocina que da <strong>servicio de restauraci\u00f3n a domilicio<\/strong>, donde <strong>los clientes llegan a trav\u00e9s de su promoci\u00f3n digital<\/strong> y online en los canales de APP de delivery, redes sociales e internet.<\/p>\n\n\n\n<p>Piensa que <strong>es una cocina central<\/strong>, donde cada una de las partidas son igual de importantes, porque van definidas conforme a la propuesta gastron\u00f3mica dise\u00f1ada. <strong>Es una cadena de producci\u00f3n en toda regla<\/strong>, donde <strong>el tiempo de respuesta<\/strong> a la hora de sacar el servicio<strong> es fundamental<\/strong>.<\/p>\n\n\n\n<p>La ventaja principal es<strong> la reorganizaci\u00f3n de costes de personal que supone<\/strong>, y que a priori si se hace correctamente <strong>supondr\u00eda un ahorro en esta partida <\/strong>de la cuenta de explotaci\u00f3n. Ya que el coste de toda<strong> la brigada de sala del restaurante<\/strong>, los vendedores de nuestros platos,<strong> pasa a ser el de los repartidores o riders<\/strong>. Siendo la plantilla de cocina imprescindible y reforzada siempre y cuando la oferta culinaria lo requiera.<\/p>\n\n\n\n<p>Adem\u00e1s si contamos con una gran cocina, podemos, <strong>si no queremos involucrarnos en una nueva l\u00ednea<\/strong> gastron\u00f3mica en nuestro establecimiento,<strong> buscar otros emprendedores que ya con un negocio de delivery y que necesiten espacios para poder ampliar su negocio<\/strong>. Al poder analizar en detalle las franjas horarias de mayor demanda de comida a domicilio, <strong>podemos optimizar los momentos de apertura y carga de plantilla<\/strong>. No olvidemos <strong>que abrir o cerrar depende<\/strong> de la informaci\u00f3n p\u00fablica de que hagamos <strong>de nuestro horario en las APP y canales de env\u00edo a domicilio<\/strong>, actualizable y modificable a tiempo real.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">\u00bfQu\u00e9 necesito para convertir mi restaurante en una dark kitchen?<\/h2>\n\n\n\n<p>Fundamentalmente<strong> una buena ubicaci\u00f3n<\/strong>. Es decir, una situaci\u00f3n f\u00edsica del restaurante, <strong>donde se pueda llegar a un gran n\u00famero de posibles clientes en un radio no mayor de 3 km<\/strong>. <\/p>\n\n\n\n<p>Nos encontramos con restaurantes que <strong>tienen una muy buena localizaci\u00f3n<\/strong>, pero que por culpa de <strong>la crisis del covid-19<\/strong> y sus restricciones, sus clientes <strong>han cambiado sus h\u00e1bitos de consumo<\/strong> y no acuden como antes. <strong>Son estos restaurantes ideales para poder hacer un cambio o adaptarse temporalmente como dark kitchen.<\/strong><\/p>\n\n\n\n<p>Si ya tengo<strong> una reputaci\u00f3n local de la marca o nombre de mi restaurante,<\/strong> ser\u00e1 ir un paso por delante.
