La carne de ave en el delivery, Avianza Challenge 2020.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">La carne de ave una oportunidad para los restaurantes en el segmento delivery<\/h2>\n\n\n\n<p>En tiempo de crisis, tiempo de oportunidades. Cada vez son m\u00e1s los establecimientos que <strong>est\u00e1n adaptando sus cocinas para realizar env\u00edos a domicilio<\/strong>. Sin embargo, parece que la oferta gastron\u00f3mica que se puede disfrutar desde casa es mucho m\u00e1s limitada, y no es as\u00ed. Las carnes av\u00edcolas, llenas de propiedades nutritivas y muy saludables, pueden ser disfrutadas por todos a trav\u00e9s de<strong> los servicios de <em>delivery<\/em><\/strong>. <\/p>\n\n\n\n<p>Y, para demostrarlo, Linkers y la Academia Bocuse d\u2019Or Espa\u00f1a, con el patrocinio de Avianza, han lanzado el Avianza Challenge 2020. Donde los chefs de 6 escuelas de hosteler\u00eda de Espa\u00f1a competir\u00e1n por crear el mejor plato con las variedades m\u00e1s conocidas de ave de nuestro pa\u00eds; en un formato pensado para disfrutar a domicilio.&nbsp;<\/p>\n\n\n\n<p>Ante el constante cambio de restricciones y normativas, muchos establecimientos han decidido recientemente dar el salto a ofrecer <strong>servicio a domicilio<\/strong>. Desde que comenz\u00f3 la pandemia, muchos restaurantes y locales de hosteler\u00eda han visto en este sector una posible salida al cierre de los negocios. Y ahora, esta tendencia no solo se ha consolidado, sino que va en aumento. Sin embargo, no todos los platos parecen estar igual de presentes en las mentes de los cocineros. Productos como el pollo, las codornices o el cap\u00f3n pueden ser una alternativa saludable para disfrutar de la mejor gastronom\u00eda sin tener que encender un solo fog\u00f3n. <\/p>\n\n\n\n<p>Y, para demostrarlo, la consultora <strong><a href=\"http:\/\/www.linkers.es\">Linkers<\/a><\/strong> y la <strong><a href=\"http:\/\/www.bocusedospain.com\">Academia Espa\u00f1ola Bocuse d\u2019Or<\/a><\/strong>, con el patrocinio de <strong><a href=\"https:\/\/avianza.org\">Avianza<\/a><\/strong>\u2013anteriormente denominada Propollo y que celebra as\u00ed su cambio de nombre\u2013. Han lanzado el primer concurso <strong>Avianza Challenge 2020<\/strong>. Con el objetivo de que j\u00f3venes chefs de toda Espa\u00f1a demuestren que se pueden preparar pedidos a domicilio donde la carne aviar es la protagonista en la alta cocina. Dando espacio al picant\u00f3n, la pularda o la codorniz. Una acci\u00f3n que pretende poner en valor la riqueza de especies av\u00edcolas en nuestro pa\u00eds y su influencia en la gastronom\u00eda.&nbsp;<\/p>\n\n\n\n<p>Para participar, los cocineros de las <strong>escuelas de hosteler\u00eda<\/strong> deber\u00e1n remitir sus propuestas de platos. De ellos, tres concursantes de cada escuela ser\u00e1n elegidos por la Academia Bocuse d\u2019Or Espa\u00f1a. Que deber\u00e1n realizar sus platos delante de un miembro de la Academia en un m\u00e1ximo de dos horas. Tras probar los tres platos, se elegir\u00e1 al <strong>finalista de cada escuela<\/strong>. Para finalizar, el jurado elegir\u00e1 qu\u00e9 plato de cada finalista es mejor. Y se escoger\u00e1 al <strong>ganador nacional<\/strong>, cuyo nombre se anunciar\u00e1 el <strong>26 de diciembre<\/strong>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Un jurado de excepci\u00f3n y j\u00f3venes chefs, para un producto nacional y de gran calidad<\/h2>\n\n\n\n<p>Para un concurso tan especial, el jurado no pod\u00eda ser menos, y por ello las valoraciones las emitir\u00e1n los chefs <strong>Albert Boronat<\/strong>, ganador del Bocuse d\u2019Or Espa\u00f1a 2019 y finalista de Bocuse d\u2019Or Europe 2020; y <strong>Juan Pozuelo<\/strong>, director t\u00e9cnico de la Academia Bocuse d\u2019Or Espa\u00f1a y Coach del Bocuse d\u2019Or Spain Team 2020. De esta manera, la <strong>Escuela de Hosteler\u00eda de Toledo<\/strong> tendr\u00e1 que elaborar un plato a base de picant\u00f3n, el <strong>IES Hotel Escuela de Madrid<\/strong> lo har\u00e1 con Pularda. En la <strong>Joviat Escuela de Hosteler\u00eda de Manresa <\/strong>lo har\u00e1 con codorniz, al igual que la <strong>Escuela de Hosteler\u00eda Hofmann Barcelona<\/strong>. Por \u00faltimo, la <strong>Escuela Superior de Hosteler\u00eda de Sevilla<\/strong> se ocupar\u00e1 de las elaboraciones con pavita y en la <strong>UCAM Grado Universitario de Gastronom\u00eda de Murcia<\/strong>, lo har\u00e1n con cap\u00f3n.
