About the role We are seeking a passionate and dynamic Sommelier to lead our beverage program and elevate the guest experience across all drink offerings. This role goes beyond wine service — you will actively contribute to the restaurant floor, support overall service, drive beverage sales (including cocktails, spirits, and sake), and play a key role in training and inspiring the team. What you will do Ability to advise the guest on beverage selection and to supervise the day-to-day wine service. Responsible for selecting and consolidating the wine list by adhering to the budget and beverage cost, the requests of the guests and the concept of the outlet. Conduct staff training on product knowledge with a weekly frequency and work closely with restaurant general manager and chef for product development. Assisting in weekly and monthly wine inventories of all F&B outlets. Experience with and knowledge of Spanish cuisine and wines is highly preferred. Assists servers with wine service. Checks back with guests to assure their satisfaction. Keeps in contact with wine storeroom to ensure availability and correctness of products. Beverage Program & Sales Curate and maintain a well-balanced, innovative, and profitable wine list. Collaborate with the bar team to understand and promote cocktails, spirits, and sake offerings. Identify opportunities to upsell and pair beverages creatively with food. Drive revenue through strategic recommendations and a strong presence in the dining room. Monitor inventory, assist in stock management, and contribute to cost control. Service & Guest Experience Provide warm, knowledgeable, and engaging service to guests. Support the floor team during service, assisting with food and beverage delivery when needed. Build relationships with regular guests and guide them through the beverage experience. Collaborate with the Head Bartender and FOH team to ensure a cohesive guest journey. Training & Team Development Conduct regular training sessions to educate the team on wine, cocktails, spirits, and sake. Empower the service team to confidently recommend beverage pairings. Lead pre-service briefings and tastings to keep the team informed and inspired. Collaboration & Creativity Work closely with the kitchen, bar, and restaurant leadership to align beverage offerings with menus and seasonal themes. Participate in events, pairings, and promotions that showcase the beverage program. What you bring The ideal candidate must have previous experience in a fine dining setting, must be a self-starter, possess a positive attitude and be comfortable working alongside a team of Food & Beverage professionals. Strong communicating skills are essential since you will be in contact with the clients and with different departments within the hotel. In addition, knowledge of wines and spirits and their pairings are crucial. Must have the legal right to work in Spain and have fluency in English and Spanish.
