    Commitment to Quality: • Atender a los line ups de las cocinas de forma rotativa. • Informar sobre cualquier información relevante en cuando a BSA, inspecciones, etc…) • Llevar a cabo mini cápsulas de formación. Transcendents: • Realizar visitas a las cocinas de forma regular para identificar incidencias en las máquinas, herramientas, etc… • Reportar cualquier incidencia a través del sistema Transcenent. • Seguimiento del estatus de los Transcendents y verificar que están resueltos. Revisión de cámaras: • Revisión del buen funcionamiento de las cámaras (si están encendidas y si marcan la temperatura correcta) • Revisión del estado de los productos (fechas de caducidad, organización y almacenamiento correctos, implementación del sistema FIFO) Food Waste: • Asegurar el registro diario del desprecio de comida tanto del bufete de desayuno como de cualquier evento (in house y offsite). • Documentar dichos registros de forma digital y distribuirlos a los Conference. • Buscar de forma constante maneras de mejorar la gestión de residuos en la cocina. • TDB – registrar el desperdicio del Club. HACCP Walkthoughs: • Acompañar a la inspectora de sanidad en sus inspecciones mensuales de las cocinas. • Revisar los informes producidos por la inspectora y completarlos con puntos adicionales además de medidas correctoras y sugerencias a corto y largo plazo. • Distribuir los informes a los chefs correspondientes además del equipo de ingeniería y stewarding en caso necesario. • Hacer seguimiento de forma regular para asegurar la corrección de los puntos destacados por la inspectora. • Revisión semanal del estado de limpieza de las máquinas de hielo y programar su limpieza si no están de acuerdo con los estándares. • Seguimiento de las medidas correctoras con cocina, ingenieria, stewarding, etc HACCPP: • Revisar y asegurar el correcto registro de todos los documentos de sanidad de las cocinas de forma regular. • Recoger al final de mes todos los registros de sanidad A-1, A-2, A-3 y limpieza de todas las cocinas y almacenarlos en la oficina. Reciclaje: • Asegurar el correcto reciclaje de residuos en las cocinas. BSA: • Ser conocedor de los objetivos a cumplir del BSA y mantenerse al día con cualquier cambio. • Realizar inspecciones del manejo y sanidad de alimentos y APPCC en todas las cocinas bajo los estándares de la compañía (BSA) de forma recurrente. Pedidos por Birchstreet • Apoyo constante en la realización de los pedidos de las cocinas. Formaciones: • Llevar actualizado el listado de formaciones de Manipulación de Alimentos y APPCC de los D&C del departamento culinario. • Coordinar con RRHH fechas de dichas formaciones y la asistencia de los cocineros para asegurar que ninguno tenga un certificado expirado. • Mantener el control de almacenamiento de los certificados y distribuir copias a los cocineros. Limpieza periódica de las cámaras frigoríficas/congeladoras: • Mantener informado al equipo de cocina de cuándo son las limpiezas periódicas de la nevera y el congelador. • Asegurarse de que las neveras estén accesibles y vacías, para que el equipo de limpieza pueda trabajar correctamente. • Coordinar con los Sous-Chefs Ejecutivos las fechas de las limpiezas. Recetario: • Crear documentos de las recetas nuevas implementadas por los chefs. • Actualizar Costos de las recetas. • Conocer y actualizar los alérgenos en las fichas técnicas.
