    Responsabilidades en Barra El equipo de barra es responsable de ejecutar el programa de bebidas con precisión, consistencia y estilo, garantizando una experiencia de alto nivel en cada servicio. 1. Preparación y mise en place Preparar la estación antes del servicio: cortes de fruta, hierbas, garnishes, jarabes y mezclas. Verificar stock de licores, vinos, hielo y cristalería. Asegurar que herramientas estén limpias, organizadas y listas (shakers, jiggers, bar spoons). Montar la barra según estándares visuales y operativos. 2. Ejecución de coctelería Preparar cócteles siguiendo recetas estandarizadas (medidas exactas, técnica y presentación). Dominar clásicos (martini, negroni, gin & tonic) y recetas de la casa. Mantener consistencia en sabor, temperatura y estética. Adaptar bebidas según preferencia del cliente sin comprometer calidad. 3. Conocimiento del producto Conocer en profundidad la carta: ginebras, vinos españoles, vermuts, licores. Entender perfiles de sabor, origen y storytelling de cada producto. Recomendar bebidas con criterio (pairing, upselling elegante). Explicar cócteles y productos de forma atractiva y segura. 4. Servicio y hospitalidad Interactuar con el cliente con actitud profesional, cercana y segura. Leer al cliente: saber cuándo conversar y cuándo ejecutar rápido. Mantener ritmo de servicio alto sin perder calidad. Gestionar quejas o ajustes con calma y solución inmediata. 5. Control de inventario Monitorear consumo diario de productos. Reportar faltantes y realizar pedidos según sistema. Minimizar desperdicio (uso eficiente de ingredientes). Control de porciones y costos en cada preparación. 6. Limpieza y organización Mantener la barra limpia y ordenada en todo momento. Cumplir con normas sanitarias (NYC DOH). Limpieza profunda al cierre: superficies, herramientas, drenajes, hielo, cristalería. Evitar acumulación de residuos o producto abierto. 7. Trabajo en equipo Coordinar con cocina y floor para tiempos de servicio. Apoyar a compañeros en momentos de alto volumen. Mantener comunicación clara durante el servicio. 8. Responsabilidad y control Cumplir con políticas de alcohol (edad legal, servicio responsable). Manejo correcto de caja/POS (si aplica). Evitar pérdidas, errores o “giveaways” no autorizados. 9. Cierre de barra Conteo de inventario clave. Reposición parcial para siguiente turno. Limpieza total y organización para apertura siguiente. Reporte de incidencias del servicio.

About the role Four Seasons Hotel Madrid is currently seeking a Cost Controller to join our team. Reporting to the Performance Optimization Assistant Manager, this position will monitor and control all procedures that affect the receipt, issuance, general controls and sales of food and beverage in the hotel and to ensure that all control functions are established and enforced according to Four Seasons Hotel Ltd. policies and procedures. What you will do Establish and maintain local policies as they relate to the receipt, issuance and general controls of food and beverage. Monitor daily revenues and costs and prepare a daily and month to date Food and Beverage Cost Report as prescribed in the Accounting and Finance Manual. Monitor and record all house account meals and entertainment expenses (80-20 rule) and report any non-compliance to the Assistant Director of Finance for follow-up with the hotel management. Maintain up-to-date meat specifications and perform regular yield tests to ensure vendor compliance. Maintain menu costings on all food and beverage items and make F & B Management aware of any pricing problems. Constantly monitor all food and beverage controls to ensure compliance with Four Season Hotels Ltd. policies and procedures. Perform any other spot-checks as prescribed in the Food and Beverage Control Manual. Coordinate, attend and monitor all food and beverage, spa and guest supplies inventories to ensure accuracy. Verify, extend and tabulate the above inventories and prepare the monthly inventory adjustments journal entry. Prepare comprehensive Food and Beverage Control Report by the 10th day of the following month. Maintain a close working relationship with the Food & Beverage Director, Executive Chef and Director of Purchasing and make them aware of any potential problems or opportunities to improve the controls in their areas as they relate to food and beverage. Attend Food & Beverage Meeting to review prior month's Food & Beverage report to highlight actions needed, and focus Food & Beverage management on appropriate opportunities. Conduct self in a professional manner at all times to reflect the high standards of Four Seasons and encourage staff to do the same. Perform any additional duties as assigned by the Director of Finance, to include a participative role in Operating Equipment inventory taking. Prepare P&L for specific events to analyze profitability. What you bring Must have a thorough working knowledge of all corporate policies and procedures as they relate to Food and Beverage Control.
