The Role of Pastry Sous Chef : Four Seasons Hotel Madrid is looking for a pastry sous chef to join our team. Our Pastry Sous Chef should provide leadership and management for the Main Kitchen by establishing plans of character, integrity, and quality which result in the long-range continued growth and profitability of the department. The main duties to perform are: Executing the instructions of the Executive Pastry Chef and Executive Chef. Assist in training, development, of employees in the Main Kitchen through effective management and leadership to ensure that established cultural and core standards are met. Control Main kitchen labor and operating expenses through effective planning, purchasing decisions, policy making, and inventory control while focusing on creative cost control and revenue generation solutions to maximize profit in the department, division and hotel. Ensuring the adherence to the hygiene and safety standards and requirements per the applicable Legislation. Set up control systems which will assure quality and portion consistency and the ability to create proper purchasing specifications as well as monitor and review operating criteria and develop an awareness of the importance of the preparation and quality of the product. Communicate with employees to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments. Sign all food requisitions and make the proper adjustments. Check on all equipment in the Main Kitchen that has to be fixed and report to the Restaurant Chef and / or the Executive Chef immediately. Check all the kitchen storerooms daily; ensure that food is well rotated on a first in-first out rotation. Assisting in planning and developing menus for the hotel’s outlets. Our Ideal Pastry Sous Chef will have : Our ideal Pastry Sous Chef candidate has excellent interpersonal skills, as well as the ability to provide exceptional service according to standards. This position does require an applicant with a flexible schedule, able to work morning and afternoon shifts, weekends, and holidays. The ability to multi-task is required, as well as the ability to plan, organize, control and direct the work of employees. As a Front Office Intern you will gain valuable knowledge about procedures and all the operational aspects of Front Office. You will be trained in delivering the highest level of service while working closely with other departments of the Hotel. You will be exposed to a luxury environment and experience different types of services in various situations, learn how to deal with various payment methods, welcome and acknowledge all guests according to company standards and procedures. The main duties that you will be involved in will include: Checks in guest in an efficient and friendly manner, using guest name whenever possible. Assures that guest is assigned type of room requested, credit or method of payment is established, the correct rate is charged and issues correct keys to the guest. Arranges for luggage to be delivered to guest room. Checks guest out of the hotel, preparing and explaining the bill. Handles all guest interactions with the highest level of hospitality and professionalism, accommodating special requests whenever possible; resolves customer complaints; assists guests inquiries in connection with hotel services, hours of operations, key hotel personnel, in-house events, directions, etc. Responds to all guest requests in an accurate and timely manner. Utilizes a variety of computer systems to check guests in and out, run daily reports and select and block rooms for arriving guests. You should have attention to detail, strong interpersonal and communication skills, the ability to multi-task with excellent organizational skills, be a team player and bring your personal touch and energy to our guest experiences. What we offer Through this internship opportunity, we're hoping to provide a high caliber learning experience. This opportunity entails: Full time 6-months internship (40h/day), in rotating shifts (8h/day). 2 days off per week, and we are including 30 minutes for lunch within the working day. Meals are covered during shift. Uniform and its cleaning is provided at the hotel. We are offering 5 days of holiday within the 6-months period, as well as the day of the birthday free.     What you’ll do We offer an internship that encompasses two fundamental aspects of this business: hands-on experience and management. In the first part of the internship, the first month, the student will be in the main kitchen of the hotel, where they will be part of various processes and sales points carried out from this kitchen. These include: Production Kitchen – Butchering and portioning meats and fish, preparing bases, pasteurizing stocks, sauces, preserves, and packaging. Banquet Service and Plating – Plating and regenerating group menus, serving coffee breaks and contracted breakfasts. Pastry and Bakery – Preparing desserts, making pastries, bread, and specialties for all hotel restaurants, providing breakfast service in the hotel buffet, show cooking, and creating signature juices. During the second part, the second month of the internship, the student will be part of the team at Lora, a Levantine cuisine restaurant with a Mediterranean soul. The student will rotate through the different sections of the restaurant, which include: Cold Kitchen – Preparing mezzes and starters, recipe bases for finishing in the hot section, marinating, and making stocks. Grill and Oven Kitchen – Facing the customer, preparing "flatbreads" or Arabic bread. We grill marinated meats on skewers and expertly roast the finest fresh fish. Sweet Kitchen – Arabic specialties complement a Mediterranean offer, which will be guided by a renowned pastry chef. In the third part of the internship, the last month, the student will be trained in the more technical side of the kitchen, where our Executive Chef and Kitchen Coordinator will instruct them in: Costing and Technical Sheets of Dishes: Profitability ratios and cost vs. profitability. Inventory Control and Valuation: Minimum stocks, par stock, and an introduction to our purchasing and ordering system, both internal and external. HACCP Protocols: Completing self-control sheets according to current legislation. What we are looking for...
